International Chocolate Day

Gotta love a day the involves a celebration of chocolate! On the MOPS website there was a kid friendly recipe for chocolate dipped pretzels. I see a chocolate celebration in my future. O.K. so I celebrate every day with chocolate!

From the MOPS website:

Chocolate-dipped Pretzels

1 bag of milk chocolate chips
a bag of pretzel rods

Melt the chocolate chips in a microwave-safe bowl. Let the kids dip one end of the pretzel rods into the chocolate. Lay the coated pretzels to cool and harden on wax paper before eating. To speed up the hardening process, put the coated pretzel rods in the freezer for 5 minutes. And to give your pretzels a little flair, melt ¼ bag of white chocolate chips and drizzle over the chocolate portion of your pretzel rods.

Oreo Cookie Pudding

This is my favorite "go-to" dessert for comfort food, but... I just don't make it often enough! It does terrible things to your waistline, but it's really healthy for your soul. :)
You're gonna have to lick the bowl clean, you know.

1 (5.9 oz.) package chocolate instant pudding mix.
2 cups milk
1 (3 oz.) package cream cheese, softened
1 (8 oz.) container frozen whipped topping, thawed.
16 double-stuffed Oreos, crushed, about 2 cups
3/4 c. pecans, toasted.

Whisk together chocolate instant pudding mix and 2 cups milk for 2 minutes. Cover pudding, chill 5 minutes.
Stir together cream cheese and whipped topping, blending well.
Place 2 cup crushed cookies evenly on bottom of an 8 cup bowl. Spread half of cream cheese mixture over crushed cookies, sprinkle with half of pecans. Spread all of pudding evenly over top; spread remaining cream cheese mixture evenly over pudding. Sprinkle with remaining cookies and pecans. Chill well, until serving.

Serves 6 to 8.
